Pasta with Charcutier LTD Italian Sausages

This recipe uses flavoursome sausages from Charcutier Ltd to create a dish that is tasty and relatively quick to make, while also oozing a delicious depth of flavour.


Serves 4

  • 1kg passata
  • 4 garlic cloves
  • 2 red onions
  • 6 cured Italian fennel sausages from Charcutier LTD, cut into thumb-sized chunks
  • 1 large glass of red wine (any)
  • 500g fresh egg pasta (spaghetti or linguine)
  • 4 tbsp olive oil
  • Cracked black pepper


1. Take a large non-stick pan and heat the olive oil. Finely dice the onion, crush the garlic and add them both to the pan.

2. Cook the onion until soft, then add the fennel sausage chunks and fry for 10 minutes.

3. Add the passata and red wine to the sausages and onion, and cook until the liquid has reduced and the alcohol has cooked off.

4. Whilst the sausages and passata are cooking, add the pasta to a pan of boiling salted water and cook until soft or at your preferred texture.

5. Drain the pasta and divide into two bowls, top with the sausages and sauce, and serve with a generous twist of black pepper.
