    Marble cake is perfect for when you can’t decide whether you want chocolate cake or vanilla cake (don’t pretend you don’t know that struggle). You can have both in one delicious package!

    MAKES 12 CUPCAKES

    • 175g caster sugar
    • 175g self-raising flour
    • 2 eggs
    • 1 tsp baking powder
    • 1 tsp vanilla extract
    • 2 tbsp cocoa powder
    • 12 cupcake cases

    Method

    1. First, mix together the butter and caster sugar in a mixing bowl until the mix becomes creamy. Add the eggs, flour and baking powder to the bowl and mix well.
    2. Take a separate (smaller) mixing bowl, and pour half of your mixture into this bowl. In the first mixing bowl, add the teaspoon of vanilla extract and mix well.
    3. In the second mixing bowl, add the two tablespoons of cocoa powder (you can add 1-3 tablespoons to taste).
    4. Once your two mixtures are ready, spoon a teaspoon of vanilla mixture into each cupcake case, then follow with a spoon of chocolate mixture. Repeat until each cupcake case is half full.
    5. Once all the cupcake cases are full, take a cocktail stick and start swirling! You should see the marble effect starting to take place.
    6. But don’t swirl too much – remember that the dark chocolate colour can overwhelm the light vanilla. If you mix too much you will lose the marbled effect (I’m speaking from experience).
    7. Bake in the oven at 180°C for around 22-25 minutes, depending on how large your cupcakes are.
    8. Leave your cupcakes to cool and then enjoy!
