    Ingredients

    Serves 5-6

    FOR THE FRANGIPAN FILLING

    • 2 flax eggs - 2 tbsp flax. 6 tbsp water
    • 75g coconut or brown sugar
    • 75g dairy free butter
    • 3 tsp almond extract
    • 150g ground almonds
    • 2 tbsp gluten free white flour
    • 1 tsp baking powder
    • Zest of 1 lemon
    • 5-6 apples thinly sliced

    AND NOT FORGETTING

    • 1 500g block of short crust pastry (vegan)

    Method

    1. Preheat your oven to 180°C
    2. Firstly make the frangipan filling and make up the flax eggs and allow to stand for a few minutes. Cream together the butter, sugar and almond essence. Stir in the flax eggs
    3. in a large bowl mix ground almonds, flour and baking powder. Transfer the butter mix to the dry ingredients. Mix together to combine thoroughly, then mix in the lemon zest.
    4. To make the tart, add to little oil to the base and set sides of a pie tin. Roll out the pasty and drape over the tin, then press into the sides and trim the edges. Spoon in the filing to cover the base. Now top with the thinly sliced apples.
    5. Bake for 1 hour then remove from the oven and allow to cool before eating.
