    Weekends in my house mean baking time. I bake banana loaf so often I wanted to try something new and different: Blueberry Loaf!

    Ingredients

    SERVES 6-8

    • 200g plain flour
    • 3 large eggs
    • 6 tbsp honey (add more to taste)
    • 175g unsalted, softened butter
    • 200g blueberries
    • A few drops of vanilla essence

    Method

    1. Preheat your oven to 180°C and grease your loaf tin.
    2. Mix the softened butter and honey in a bowl, then add the eggs.
    3. Add flour and baking powder to make a batter. Fold blueberries into the mixture, being careful not to crush them!
    4. Put the mixture in to your greased loaf tin and place it in the oven for about an hour.
    5. After an hour, poke the loaf with a knife or skewer. If it comes out clean, it’s ready.
